Recipe: Homemade Hamburger Helper

Ingredients:

2 tablespoons extra virgin olive oil

1 large yellow onion - cut into 1/2-inch dice

3 medium carrots - scrubbed and cut into ¼-inch dice

½ teaspoon kosher salt

¼ teaspoon black pepper

3 garlic cloves, minced

1 pound ground beef

2 to 3 teaspoons hot sauce

1 teaspoon Dijon mustard

2 teaspoons smoked paprika

1 14-ounce can beef broth

2 cups water - plus additional as needed

8 ounces whole wheat elbow pasta

½ cup plain nonfat Greek yogurt

1 ½ cups grated sharp cheddar cheese

1/4 cup chopped chives - divided (optional)

Directions

1. Saute the onion and carrot with oil, salt, and pepper. Stir in the garlic.

2. Brown the beef, breaking it into small pieces.

3. Add the hot sauce, Dijon, and paprika. Stir in the beef broth and water. Bring the liquid to a boil.

4. Add the pasta, stirring frequently.

5. Stir in the yogurt and cheese.

6. Top with chives or parsley.

My only wish is that it was creamier and less creasy.  I think next time I’ll make the meat first and drain the grease from it before adding the other ingredients.
