RECIPE: INSTANT POT SPANISH RICE

I WAS MAKING SOME FIRE TURKEY WINGS WHE I REALIZED I DIDN’T HAVE ANY TYPE OF SIDE TO GO WITH IT. A QUICK GOOGLE SEARCH AND I FOUND THIS TASTY RECIPE.

Ingredients:

3 tbsp unsalted butter

2 cups long grain white rice

1 medium onion, diced

2 cloves garlic, minced

2 cups chicken broth

15.5 ounce can fire roasted tomatoes, with juice

1 tsp cumin

1 tsp chili powder

1/2 tsp dried oregano

1 bay leaf

salt and pepper

Lo Note: instead of butter we use ghee.  And instead of white rice we use brown.  Everything else is samesies.

Directions:

1. Rinse rice until the water runs clear.

2. Add butter to the Instant Pot and select the SAUTE option.

3. Add in rice and onion and cook for 3-4 minutes or until they start to get some color on them.

4. Turn off the Instant Pot and add in garlic and cook for an additional minute.

5. Add in chicken broth, diced tomatoes, cumin, chili powder, oregano and bay leaf to the Instant Pot. Cover and set the Instant Pot to pressure cook on HIGH for 4 minutes.

6. Allow the steam to naturally release then uncover and fluff rice. Discard bay leaf. Season with salt and pepper to taste then serve!
