Recipe: Roasted Piri Piri Poussins
When I say these were the best Cornish hens I ever had…
Ingredients:
Piri Piri Spice Batch
2 ¼ teaspoons sweet paprika
1 ½ teaspoons cayenne
1 ½ teaspoons garlic powder
1 ½ teaspoons dried oregan
1 ½ teaspoons kosher salt
1 teaspoon confectioners’’ sugar
½ teaspoon ground cinnamon
½ teaspoon ground cardamom
¾ teaspoon chilli flakes
¾ teaspoon ground ginger
Poussins
4 1-pound poussins or Cornish game hens
1 batch Piri Piri spice
Kosher salt
Extra-Virgin olive oil
Directions:
1. Combine the spice batch in a small bowl and set aside.
2. Preheat oven to 425. Fit a rack into a half-sheet pan. Liberally rub the spice batch on the hens and place them on the rack.
3. Roast until browned and the juices run clear, about 35 minutes. Transfer to a serving platter and let rest for at least 10 minutes before carving.
I can’t recall where I found this recipe. But I’m SO happy I did.
