Recipe: Hamburger Cauliflower Soup

Hubby and I went on a 60-Day workout and diet plan that included super lean red meat and a lot of veggies.  So I went on the hunt for recipes and came across this one.  I doctored it up a bit to make it fit my tastebuds’ needs.  But I was careful to keep it as healthy as possible.

Ingredients:

1 Tbsp olive oil

1 lb ground beef

1/2 Medium Onion (roughly chopped)

3 stalks celery, chopped

4 carrots, cut into large bite size pieces

1/2 Large Cauliflower head (cut into florets)

1 (14.5 oz) Can Stewed Tomatoes

3 Cups water

3 Beef bouillon cubes

1/4 tsp Onion Powder

1/4 tsp Garlic Salt

1/2 tsp Basil

2 Tbsp. GF curry powder

1 Tbsp. GF paprika

1 tsp. GF ground black pepper

½ tsp. GF ground cinnamon

2 Tbsp. minced ginger, about 2-inches

3 Tbsp. pure tomato paste

Salt & Pepper to taste

Directions:

1. Add the oil to a large pot and turn heat on medium.  When oil is hot, saute the onion, carrot and celery. 

2. Add the hamburger and brown. Drain excess grease.  Add onion powder, garlic salt, basil, curry powder, paprika, black pepper, cinnamon and ginger.  Cook for 2 minutes.

3. Add the stewed tomatoes, water, bouillon cubes and tomato paste. Simmer on low for about 20 minutes.

4. Add cauliflower florets and simmer (very slow simmer) for 1 hour.
