Recipe: Hoisin-Glazed Burger w/ Pickled Cucumbers

This is a simple and delish Nom-Nom recipe.  The recipe is sans carbs, but we got some buns to go with ours because we can’t help ourselves.

Ingredients:

Pickled Cucumbers

1 cucumber, thinly sliced

½ cup apple juice

½ cup rice vinegar

½ teaspoon salt

½ teaspoon red pepper flakes

Burgers

¼ cup hoisin sauce

½ cup pickled cucumbers

1 ½ pounds ground beef

2 tablespoons salt

½ teaspoon ground black pepper

1 head of butter lettuce

2 tomatoes, sliced

1 medium red onion, thinly sliced

Directions:

Pickled Cucumbers

1. Combine all ingredients in a small mason jar. Refrigerate.

Burgers

1. Divide burgers into four equal portions and season both sides with salt and pepper.

2. Cook burgers on a grill or a skillet that is greased with avocado oil or ghee. Cook on both sides until burgers reach desired doneness.

3. Brush burgers with hoisin sauce and cook long enough for the sauce to warm.  Then plate burgers.

4. Serve burgers atop a slice of lettuce and with pickled cucumbers, onions and tomato slices.
