Lime Chicken with Black Bean Sauce

Please note I made quite a few edits to the original recipe.  It wasn’t anything big…just a lot of small things.  I wrote this recipe as I cooked it. 

Ingredients:

Chicken

4 boneless, skinless chicken breasts

3 tablespoons lime juice

4 garlic cloves, crushed

2 tablespoons avocado oil

1/4 teaspoon Ground red pepper

Pepper Relish

¼ cup red onion, diced

½ cup red bell pepper, chopped

1 tablespoon avocado oil

Bean Sauce

1 can black beans

½ cup orange juice

2 tablespoon balsamic vinegar

1 teaspoons salt

½ teaspoons black pepper

2 garlic cloves, crushed

Sprigs Fresh cilantro (Optional)

Directions:

Chicken

1. Combine the breasts with the four following ingredients in a Ziplock bag and marinate for at least 8 hours.

2. Remove chicken and reserve marinade.  Cook chicken (either in a cast-iron skillet or on the grill) until done, basting with marinade throughout. Set aside and keep warm.

Pepper Relish

1. Heat 1 tablespoon avocado oil in a pan. 

2. Add the red bell pepper and red onion.  Cook until tender. Set aside and keep warm.

Bean Sauce

1. Add the black beans, orange juice, balsamic vinegar, salt, pepper and garlic to a blender or food processor. Blend until smooth.

2. warm the blended bean mixture in a small saucepan until thoroughly heated.

Plate the chicken and cover with black bean sauce, red pepper relish and garnish with cilantro.  Feel free to have some brown rice with it as well.
