Recipe: Cumin Chicken with Spicy Tomato Relish

This is a great quick meal to make after work. It took about 20 minutes for prep and cooking.

Ingredients:

¾ cup chopped tomato

1/2 cup chopped peeled cucumber

1/2 cup chopped green bell pepper

3 tablespoons chopped red onion 1 tablespoon fresh lime juice 1 teaspoon chopped fresh cilantro

2 teaspoons olive oil

1/4 teaspoon salt

1 small jalapeño pepper, seeded and chopped

1 garlic clove, minced

1 tablespoon ground cumin

1 teaspoon black pepper

1/4 teaspoon salt

4 (6-ounce) skinless, boneless chicken breast halves

Directions:

1. Combine first 10 ingredients in a small bowl; set aside.

2. Combine cumin, black pepper, and 1/4 teaspoon salt; rub chicken breast halves with cumin mixture.

3. Place a large cast iron skillet over medium-high heat until hot (about 2 minutes). Add chicken, and cook 7 minutes on each side or until done. Cut each chicken breast half diagonally across grain into thin slices, and arrange on individual serving plates. Serve with tomato relish and brown rice if you need more to fill you up.
