Recipe: African Beef Stew
I love any meal that's slow cooked and super flavorful. Beef stew is one of my favorite such meals. I'm always looking for new variations on recipes that I love. So when I came across this recipe I was really excited. Please note that I made some alterations from the original recipe cus I likes everything spicy. But the alterations didn't take the heat factor too far. If you're sensitive to spicy food just cut out the cayenne and Scotch bonnets.
Ingredients:
2 tablespoons coconut oil
2 pounds stewing beef
2 tablespoons curry powder
1 tablespoons paprika
1 teaspoon GF ground black pepper
½ teaspoon GF ground cinnamon
1 large yellow onion, chopped
4 garlic cloves, crushed
2 tablespoons minced ginger, about 2-inches
1 yellow or orange bell pepper cut into large bite size pieces
2 large tomatoes, cut into large bite size pieces
1 14-ounce can of coconut milk
4 carrots, cut into large bite size pieces
4 medium size potatoes, peel and cut into large bite size pieces
2 cups sliced green cabbage (the slices should be about 1-inch wide)
4 tablespoons pure tomato paste
2 Scotch bonnet peppers, seeded and minced
1/2 cup minced fresh cilantro
1/4 teaspoon cayenne
Sea salt to taste
Directions:
1. Preheat oil in a Dutch oven over medium heat.
2. Season beef with spices and add to preheated pan. Sauté the beef until brown, about 3 – 5 minutes.
3. Add onions, garlic, ginger and bell pepper to the meat, reduce heat to low and continue to sauté until onions are translucent, about 5 minutes.
4. Add tomatoes and Scotch bonnets and continue to stir until mixture begins to simmer.
5. Add coconut milk and tomato paste and season with salt. Cover and simmer over low heat for 1 ½ hours, stirring occasionally.
6. Add Carrots, potatoes, and cabbage and cook covered for 1 hour or until the beef easily flakes with a fork.
Note: If the stew becomes too thick add a little more coconut milk or water.
Garnish with cilantro and serve over rice. Okay, okay, the rice might be too much carbs. But I'm a fatty sooo...
