Recipe: Parmesan Tilapia

I usually don’t like to mix dairy and fish…I’ve done it before for maybe one other recipe.  But as a rule, I try to stay away.  This recipe, however, felt like a safe bet.  I would recommend using the powdered parm instead of shredded or shaved because it will stick to the fish better.

Ingredients

4 tilapia fillets

1/2 teaspoon salt

1 large egg

2 tablespoons whole milk

1/4 cup all-purpose flour

1/2 cup plain breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup vegetable oil for frying

Lo Note: I seasoned the tilapia with WAY more than salt.  I like to use cumin, paprika and black pepper fairly liberally.  But you feel free to season as you see fit.

Directions

1. Season tilapia fillets with salt.

2. In one shallow dish, egg and milk. Whisk well. In another shallow dish, place flour. In the third shallow dish, stir breadcrumbs with Parmesan.

3. Dip each tilapia fillet in flour first, then egg mixture, then breadcrumb mixture.

4. Heat up oil in large frying pan over medium heat. Fry each tilapia fillet on both sides until golden brown. Remove from heat and let cool for 5 minutes before serving.
