Recipe: Sweet and Fiery Country Style Ribs

I started off making the Banging Baby Back Rib recipe from the Nom Nom Paleo Ready or Not! Book.  But I didn’t have baby back ribs.  I had boneless ribs and I thought country style might be perfect.  So I adjusted some of the ingredients and popped those babies in the Instapot.  And it turned out heavenly.

Ingredients:

2 pounds of boneless ribs

1 cup apple juice

Dry Rub

1 ½ tablespoons salt

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon ground pepper

BBQ Sauce

½ cup apricot jam

2 tablespoons coconut aminos

¼ cup siracha

2 tablespoons tomato paste

1 teaspoon minced fresh ginger

Directions:

1. Combine dry rub ingredients.  Season ribs all over and refrigerate for 2 hours.

2. Pour the apple juice into the Instapot.  Put the steam rack into the pot and arrange the ribs in even layers in the pot.  Seal and Pressure Cook for 35 minutes.

3. Combine sauce ingredients in a saucepan and stir over medium heat until simmering.  Set aside.

4. When the ribs are done remove them and place them on a wire rack that’s on a baking sheet covered in aluminum foil.  Basted the ribs with half the sauce and broil for 5-8 minutes.

Remove ribs and serve with remaining sauce.
