Recipe: Bourbon Bacon Pulled Pork and Cole Slaw

Ingredients:

Pulled Pork:

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1 teaspoon ground black pepper

2 pounds pork loin

1 cup packed brown sugar

½ cup bourbon

1/3 cup apple cider vinegar

Cole Slaw:

6 oz cole slaw dressing

2/3 head of cabbage, chopped

2 carrots, shredded

Salt & pepper to taste

Directions:

1. Combine slaw ingredients.  Feel free to throw in any extra spices or herbs you feel like.  Some people like to use a mixture of red cabbage and green…do whatever floats your boat.

2. Combine garlic powder, onion powder, salt, and pepper in a small bowl. Massage over all sides of pork loin for 1 minute. Place pork in a slow cooker.

3. Mix brown sugar, bourbon, and apple cider vinegar together in a bowl and pour over pork loin. Close slow cooker.

4. Cook on HIGH for 1 hour.  Cook on LOW for 5 hours. Shred with a forks.

Lo Note: Some people remove the pork from the juice to shred it...I'm not them people.

Place on bun, top with barbecue sauce and slaw.

The only reason we made this was because we had a head of cabbage lying around that we didn’t know what to do with.  Since we always have pork somewhere up in this place, it was a natural progression to pulled pork sammies.
