Recipe: Honey Sriracha Chicken
A while back I was supposed to be purchasing maple syrup and got honey instead. That wasn’t such a big deal, except I had JUST bought honey from Costco. So I had way more honey than anyone ever needs. I looked up some recipes that incorporate honey and this one looked delish.
Ingredients:
2 tablespoons coconut oil
2 pounds Chicken breast Cut into small 2 inch cubes
*1 orange bell pepper, chopped
*¼ cup red onion, minced
*1 8-12 ounce package of string beans
2-3 tablespoons Sriracha
2 tablespoons Soy sauce Low sodium
1 tablespoon Lemon juice
2 tablespoons Vinegar
1 tablespoon Garlic paste Or 1 tbsp finely chopped garlic
1 teaspoon Ginger paste 1 tbsp finely minced ginger
Salt To taste
Pepper To taste
1/4 cup Honey
1 teaspoon Sesame seeds For garnish
*Lo Note: The original recipe didn’t have veggies in it. But we thought it would be nice to make it like a stir fry…so we did.
Directions:
1. Mix sriracha, soy sauce, lemon juice, vinegar, garlic pasta, ginger paste, salt, pepper, honey and set aside.
2. Heat oil on medium heat in a non-stick pot or pan.
3. Add string beans, red onion and bell pepper (or whatever veggies you like). Cook for 2 minutes.
4. Add chicken and sauté for a few seconds.
5. Add mixed sauce, cover and cook for 10 minutes.
6. Uncover and let it cook until liquid is reduced and sauce's thickness is to your desired consistency.
Garnish with sesame seeds. Enjoy!
