Recipe: Pressure Cooker Kalua Pig

Please note, this recipe is for an InstaPot pressure cooker. I barely know how to use mine, so I def can’t tell you how to use any other type of pressure cooker.

Ingredients:

6 slices of bacon

1 (3 to 5 pound) shoulder roast pork

5 garlic cloves, chopped

1 ½ tablespoons fine pink sea salt

1 teaspoon ground black pepper

1 cabbage, cored and cut into 6 wedges

Directions:

1. Line the bottom of the pressure cooker with the bacon.  Sauté for 5 minutes, flipping the bacon halfway through.

2. Cut the pork into three equal pieces. Mix the garlic and black pepper in a small bowl. Make slits into each piece of pork and tuck the garlic pepper mixture into each of the slits.  Season the pork all over with the salt.

3. Arrange the pork in a single layer on top of the cooked bacon. Pour in 1 cup of water.

4. Cover and cook under high pressure for 90 minutes. Let the pressure release naturally and transfer the cooked pork to a large bowl. 

5. Add the cabbage to the liquid, cover and cook under high pressure for 5 minutes then depressurize.

Serve the pork topped with cabbage.

We also added picked red onions and thigh chili garlic sauce just for shits and giggles.
