Recipe: Bruschetta Grilled Chicken

Ingredients:

1.5 lb boneless skinless chicken thighs

1 cup diced fresh tomatoes

1 tablespoon chopped fresh basil leaves

1 teaspoon extra virgin olive oil

salt and pepper

1 cup balsamic vinegar

Directions:

1. Season thighs with salt and pepper. Place on a broiling pan and broil for 14 minutes, turning at 7 minutes.

Lo Note: I threw some paprika on there too cus I just can’t help myself.

2. Combine the tomatoes, basil, olive oil, and salt and pepper in a bowl. Stir and set aside.

3. Add the balsamic vinegar to a small sauce pan and heat over medium high heat until it begins to boil.  Reduce heat to low and simmer for 10-15 minutes, until vinegar thicken enough to coat a spoon.

4. Cover the cooked chicken with the tomato/basil mixture and drizzle balsamic glaze over top.  Serve immediately.
