Recipe: Spicy Cajun Riblets

Ingredients:

3 lbs of pork ribs

1.5 tablespoons Cajun seasoning (Tony’s or Slap Ya Mama)

1 cup chipotle chile sauce

1 onion, chopped

1 tablespoon jerk seasoning

1 jalapeño pepper, seeded and finely chopped

1.5 tablespoons lemon juice

2 teaspoons Frank’s hot sauce.

1.5 tablespoons cornstarch

Directions

1. Cut ribs into single rib portions.

2. Combine ingredients and ribs in a bowl, mix well, marinate over night.

3. Preheat oven to 300°.

4. Place ribs and marinade in a Dutch oven, cover and cook for 1.5 hours.

I served mine with mixed greens but I would have happily eaten them by their damn selves because they were that good.

The recipe inspiration came from our The Modern Dutch Oven Cookbook. But I made a LOT of edits to it. So I guess this recipe is basically mine.
