Recipe: Jamaican Turkey Burgers with Mango Salsa
Ingredients:
Salsa:
2/3 cup diced peeled avocado
2/3 cup diced peeled mango
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped red onion
2 tablespoons chopped fresh cilantro
1/2 teaspoon grated lime rind
2 tablespoons fresh lime juice
Burgers:
1 cup finely chopped red onion
1/2 cup dry breadcrumbs
1/3 cup bottled sweet-and-sour sauce
1/4 cup finely chopped red bell pepper
1 tablespoon Jamaican jerk seasoning (such as Walkerswood)
1 large egg white
1.5 pounds ground turkey
1 tablespoon olive oil
8 hamburger buns
Lo Note: The original recipe called for papaya instead of avocado. However, papaya’s are big AF and I didn’t need any left over. Also, I felt like the avocado would be a nice compliment to the mango.
Directions:
1. To prepare salsa, combine first 7 ingredients.
2. To prepare burgers, combine 1 cup onion and next 5 ingredients (onion through egg white), stirring well. Add turkey; mix well to combine. Divide turkey mixture into 8 equal portions, shaping each into a ¾ inch-thick patty.
3. In a cast iron pan heat oil. Cook patties 7 minutes on each side or until done.
4. Toast buns.
Place 1 patty on bottom half of each roll; top with 1/2 cup salsa and top half of roll.
I also made a chipotle mayo to spread on the buns and a rum punch to drink with it. Maybe one day I'll share my rum punch recipe with you all. Honestly, I can't claim it as my own. I stole it from my in-laws.
