Recipe: Hoisin Barbecued Chicken

Ingredients:

8 Chicken Thigh, skinned and trimmed

Barbecue Sauce:

2/3 cup hoisin sauce

3 tablespoons rice wine or sake

3 tablespoons low-sodium soy sauce

3 tablespoons ketchup

2 tablespoons brown sugar

1 tablespoon minced garlic.

Lo Note: The original recipe called for 8 chicken drumsticks as well.  But I basically hate drumsticks unless they’re fried sooooo…thighs it is!

Directions:

1. Prepare the sauce by combining hoisin, rice wine, soy sauce, ketchup, brown sugar and garlic. Remove ¾ of the mixture for marinating the chicken.  Put remaining sauce in a container and refrigerate.

2. Add chicken to sauce and coat well.  Refrigerate the chicken overnight.

3. Preheat the oven to 375°.

4. remove chicken from the refrigerator and place on a broiler pan coated with cooking spray. Reserve the marinade. Bake chicken for 30 minutes. Turn chicken and baste with reserved marinade.  Bake and additional 20 minutes or until done.

5. Cook remaining ¾ cup barbecue sauce until slightly thick (about 5 minutes).  Drizzle chicken with sauce.

Optional: Serve with rice and/or steamed vegetables.
