Recipe: Fried Chicken Wings

There’s about a million ways to make decent fried chicken.  But in the Brewer household we try to keep it simple.  And by simple we mean crispy and tasty AF.

Ingredients:

12 full chicken wings

½ cup flour

1 tablespoon Adobo con pimienta

2 tablespoons Lawry’s season salt

2 eggs

1 teaspoon Frank’s Red Hot

1 teaspoon garlic powder

1 cup coconut oil

Lo Note: These ingredients are approximations.  We let our ancestors guide us when making fried chicken.

 Directions:

1. Mix the Adobo, Lawry’s and flour.  Dip the wings in the flour mixture.  Let then sit for 10 minutes to dry out and soak up the seasoning.

2. Mix the Frank’s, garlic powder and eggs.  Dip the wings into the egg mixture.  Toss wings in the flour mixture for a second time.

3. In a cast iron skillet, bring the coconut oil to a sizzling temp.  Place wings in skillet so that the oil reaches the hallway point on all wings but don’t crowd them.  You should be able to fit 5-6 wings in a standard cast iron skillet. Fry them for 7-10 minutes on each side or until cooked through and crispy.

4. Drain the grease off the wings and let cool a bit before enjoying.
