Recipe: Agave Glazed Salmon
Ingredients:
2 tablespoons of maple or syrup
1 ½ tablespoons apple juice
1 ½ tablespoons lemon juice
2 tablespoons hoisin sauce
1 ½ tablespoons of fresh ginger (bottled ginger will suffice)
1 ½ tablespoon of Dijon mustard
¼ teaspoon five-spice powder
4 (6-ounce) salmon fillets
Cooking spray
Lo Note: The original recipe called for maple syrup and apple juice. But I had neither of those. I had some Agave in the Raw and apple cider so I made it work.
Directions:
1. Combine syrup, apple juice, lemon juice, hoisin, ginger, mustard and five-spice in a bowl. Baste fish with mixture and refrigerate for ten minutes.
2. place fillets, skin side down, on a broiler rack coated with cooking spray.
3. Broil for 10-12 minutes, or until fish flakes easily.
4. Use remaining marinade for basting after food is plated.

I really love salmon and tilapia recipes because they are always so quick and (fairly) fool proof. Also, the recipes are simple and I almost always have all the ingredients, with the exception of the apple horseradish salmon…there is always a trip to the market involved in making that.
