Recipe: Lemon Artichoke Chicken

Ingredients:

Cooking spray

1 pound skinless, boneless chicken breast, cut into 1/2-inch strips

2 1/4 cups chopped onion

1 cup chopped red bell pepper

1/4 cup fresh lemon juice

1/4 teaspoon salt 1/4 teaspoon black pepper

1 (14-ounce) can quartered artichoke hearts, drained

2 tablespoons grated Romano cheese

Lo Note: The salt and pepper is supposed to be the only seasoning you put on the chicken...ignore that shit.  Season the chicken as you see fit.  WTF is anyone supposed to do with four grains of salt and pepper?

Directions:

1. Heat a pan coated with cooking spray over medium-high heat. Add chicken, chopped onion, and red bell pepper; sauté 5 minutes.

2. Stir in lemon juice, 1/4 teaspoon salt and black pepper.

3. Cover, reduce heat, and simmer 10 minutes or until chicken is cooked thoroughly.

4. Stir in artichokes; cook 1 minute or until thoroughly heated. Sprinkle with cheese.

5. Serve over rice or angel hair pasta.

It really looks like slop. But I promise it tastes good.
